Plaice is a really delicious ivory white fish with a fine texture. It has small tightly packed flakes that retain the natural juices of the fish and mean it can marry well with many flavours. Plaice is really versatile, it's beautiful simply pan fried with a knob of butter or really delicious battered and served with homemade tartare sauce. The options of how you can enjoy this fish are endless. We should all be eating more Plaice, local stocks are in abundance, in fact, they are far higher than what the MSC describes as very sustainable levels. There is less demand for Plaice across the continent which means that it's really important that we celebrate this fabulous fish from our own shores. Plaice are easily recognised by their distinctive orange spots, however in the sea these clever fish will camouflage themselves, changing colour to match their surroundings. They will often live until 30 years of age or more, with the oldest Plaice ever landed being a whopping 50 years old! Approximately 140g.
Dover Sole is prized for its taste and texture, it is simply one of the most show-stopping, luxurious species from our shores. We love to cook Dove Sole under the grill with a good pinch of pure sea salt and a simple caper butter. Certainly with this fish, the more simple, the better. What makes Dover Sole so sought after is its incredible taste and texture, it is without a doubt the most flavoursome of all the Sole family. It is delicate and sweet with a firm texture and small flakes. These days Dover Sole stocks are incredibly well managed thanks to a successful Sole Recovery Plan as well as the 'Trevose Bank Closure' (active closure of areas of the North Cornish coast that protects spawning sole from winter to spring). The species is in abundance on our shores and is rated 2 by the MCS and Cornwall Good Seafood Guide. Dove Sole is some of the best seafood from our shores and is a real treat that we should celebrate. Dover Sole is commonly found throughout the coastal waters of Devon, Cornwall and Dorset. They inhabit sandy and muddy areas, burying down into the seabed, lying in wait during the day and actively feeding at night. Dover Sole have been known to live for up to 40 years, but today are rarely caught above 15 years of age. They are a migratory species and leave the shoreline in the winter, returning in the spring. Our hand dived scallops are amazingly tender and sweet, they are simply extraordinary food - a real treat. When it comes to preparing this delicious delicacy, we recommend that you keep it simple and keep it fast. A light touch of a hot pan, a little butter and a tiny pinch of salt really is all that it takes. They are simply divine and need very little encouragement to be delicious, so much so, you could even just eat them raw or with a little citrus make a wonderful ceviche. The brilliant team at Rockfish meticulously prepare the scallops for you, removing their shells and carefully cleaning them so they are absolutely pristine and ready for you to cook with. Scallops like to lodge themselves into crevices along the sea bed and unlike oysters or mussels, they don't need to attach themselves to an anchor. They are surprisingly mobile - and fast, changing locations a few times throughout the day. This makes them a challenging catch for divers, like our scallop catcher extraordinaire, Fraser. Fraser hand picks every single scallop from the sea bed, loading them into a rope net. Once the net is full, Fraser will let out a bit of his oxygen into a buoy, attached to the net, immediately bringing his catch up to the boat awaiting above. It is an incredibly skilled job, firstly to locate the scallops who will move in flocks across the sea floor and camouflage themselves with a thin layer of sand. He then must skilfully collect only the mature scallops that meet the landing size of 10-11cm, all the while practicing safe diving methods. This is wonderfully sustainable food. Like all bivalves scallops are filter feeders. This means as the water moves, bivalves take in microscopic nutrients, this eating method effectively cleans the water so bivalves end up creating a healthy environment for the organisms that live around them. They are carefully and sensitively gathered by hand and landed right on the doorstep, making food miles minimum. A proper treat! 6 scallops per pack. Made to a traditional recipe with raw milk, Yoredale is a smooth and creamy Wensleydale. Unlike a traditional crumbly Wensleydale, the team at Curlew Dairy use a slower, pre-warm recipe which leads to the smoother, buttery texture. The cheese is clothbound and aged in their maturing room for 3-4 months. The finished product boasts all the lemon yoghurt acidity you'd expect from a classic Wensleydale, with an earthy tone closer to the rind. Delicious to enjoy as part of any cheeseboard, this cheese pairs beautifully with fruity chutneys. We particularly enjoy this cheese on a generous slab of fruitcake - just as they would in Yorkshire! 200g About the Maker Curlew Dairy are a micro dairy based in Wensleydale, producing small batches of traditional farmhouse Wensleydale cheese using local unpasteurised milk. The team at Curlew recognised that the key to award-winningly good cheese was truly delicious milk. All their milk comes from a small, local herd of Holstein and Ayrshire cows, who enjoy grazing the lush Yorkshire pasture during the warmer months and haylage through the colder months. This results in a beautiful, subtly sweet milk which is left unpasteurised to truly reflect the 'terroir' of the farm; every aspect of the cows' lifestyle - the weather, the grazing, the season and even the bacteria in the soil - plays a part in the final flavour of this truly special cheese.
