Ingredients

  • 4 Large Eggs
  • 200ml Whole Milk
  • 200g Strong White Flour
  • 1 Pinch of Salt
  • Beef Dripping or Vegetable Oil (for tins)
  • 2 Large Onions & 500ml Beef Stock (for gravy)

Method

  1. Whisk eggs and milk together thoroughly in a bowl. Sift in flour and salt, whisking until batter layer is smooth and lump-free.
  2. Pour batter into a jug and rest in the fridge for minimum 1 hour—this relaxes starch bonds to maximize rise.
  3. Add 1 tsp of beef dripping or oil into each compartment of a 12-hole muffin tin. Place in oven at 220°C until fat is smoking hot.
  4. Working lightning-fast, slide oven rack out and fill each tin compartment half-full with batter. Close door immediately.
  5. Bake for 20-22 minutes without opening oven door until puddings are crisp, hollow, and towering. Serve with simmered onion gravy reduction.
