Hugh Fearnley-Whittingstall

The passionate pioneer of modern ethical eco-eating and self-sufficiency. Broadcasting from his idyllic Dorset smallholding in 'River Cottage' starting in 1999, Hugh challenged viewers to deeply confront the origins of their meals. He fiercely championed local foraging, humane nose-to-tail eating, and sustainable small-scale agriculture. His radical experiments in living entirely off the land inspired an enduring national shift toward ethical consumption.

Foraged Wild Mushroom & Herb Tart

An earthy, rustic tart celebrating seasonal wild mushrooms in a rich, buttery shortcrust pastry.

Ingredients

  • 250g Shortcrust Pastry
  • 400g Wild Mushrooms (Chanterelles, Porcini, Field), sliced
  • 25g Butter
  • 2 Large Shallots, chopped
  • 2 Free-range Eggs
  • 150ml Crème Fraîche
  • 1 Bunch of Fresh Flat Parsley & Chives
  • Salt and Pepper

Method

  1. Roll pastry sheet thin and line a 20cm loose-bottomed tart tin. Chill for 20 minutes, then blind bake with weights at 190°C for 15 minutes.
  2. Melt butter in a pan and cook shallots until soft. Turn up heat, drop in wild mushrooms, and fry quickly until moisture leaves.
  3. Season mushrooms heavily with pepper and herbs, then distribute evenly across the base of your baked pastry shell.
  4. Whisk eggs and crème fraîche together in a jug, season with salt, and pour slowly over the mushrooms.
  5. Bake at 180°C for 25 minutes until the custard filling turns beautifully set and golden around edges.
