Spiced Jerk Chicken Wings

Fiery, deeply aromatic, and sticky street-food style wings reflecting Ainsley's beloved culinary roots.

Ingredients

  • 1kg Chicken Wings, split at joints
  • 2 tbsp Allspice berries, crushed
  • 1 tbsp Dried Thyme
  • 1 tbsp Brown Sugar
  • 3 Scotch Bonnet Chillies, minced
  • 4 Cloves of Garlic
  • 1 Bunch of Spring Onions
  • Juice of 2 Lime

Method

  1. Blend allspice, thyme, sugar, chillies, garlic, spring onions, and lime juice into a thick, paste-like marinade.
  2. Toss chicken wings thoroughly inside the paste and marinate in the fridge for at least 2 hours (overnight is better).
  3. Preheat your oven to 200°C and line a large baking sheet with parchment paper.
  4. Arrange the wings across the tray and roast for 35 minutes, turning halfway through, until completely cooked and charred on edges.
  5. Serve piping hot with extra squeeze of fresh lime juice over top.
