Ultimate Decadent Chocolate Guinness Cake

A deeply damp, rich chocolate cake topped with a thick layer of cream cheese icing resembling a perfect pint stout.

Ingredients

  • 250ml Guinness Stout
  • 250g Unsalted Butter
  • 75g Cocoa Powder
  • 400g Caster Sugar
  • 150ml Sour Cream
  • 2 Large Eggs
  • 1 tbsp Vanilla Extract
  • 275g Plain Flour
  • 2.5 tsp Bicarbonate of Soda
  • 300g Cream Cheese & 150g Icing Sugar (for icing)

Method

  1. Preheat oven to 180°C. Grease and line a 23cm springform cake tin.
  2. Pour the Guinness into a large saucepan, add the butter, and heat gently until melted. Whisk in the cocoa and caster sugar.
  3. Beat sour cream with eggs and vanilla extract in a bowl, then pour into the warm Guinness mixture.
  4. Whisk in flour and bicarbonate of soda until completely smooth. Pour into the tin and bake for 45 minutes to an hour.
  5. Let cool entirely. Whip cream cheese with icing sugar until smooth, then spread across the top to mirror a stout head.
