Nadiya Hussain

Nadiya won The Great British Bake Off in 2015 with a final that drew more than fourteen million viewers, and her winning speech became a national moment. She has since built a career as a presenter and author, bringing Bangladeshi flavours and family warmth to mainstream British cooking with huge personality and a readiness to experiment.

Fragrant Chicken Biryani

Layered spiced chicken and saffron rice, steamed slowly until everything melds.

Ingredients

  • 800g skinless Chicken thighs, cut into chunks
  • 150g natural Yoghurt
  • 2 tbsp ginger and garlic paste
  • 2 tsp garam masala and 1 tsp turmeric
  • 2 Onions, thinly sliced
  • 300g basmati Rice
  • Pinch of saffron in 3 tbsp warm milk
  • Fresh coriander and mint, chopped

Method

  1. Marinate the chicken in the yoghurt, ginger and garlic paste, garam masala, turmeric and salt for at least 1 hour.
  2. Fry the onions in ghee or oil until deep golden. Stir half through the chicken and keep half for garnish.
  3. Par boil the rice for 6 minutes in salted water and drain.
  4. Layer the chicken in a heavy pot, then the rice, herbs and saffron milk. Cover tightly.
  5. Cook on the lowest heat for 30 minutes, rest for 10, then fluff and top with the reserved onions.
