Plaice is a really delicious ivory white fish with a fine texture. It has small tightly packed flakes that retain the natural juices of the fish and mean it can marry well with many flavours. Plaice is really versatile, it's beautiful simply pan fried with a knob of butter or really delicious battered and served with homemade tartare sauce. The options of how you can enjoy this fish are endless. We should all be eating more Plaice, local stocks are in abundance, in fact, they are far higher than what the MSC describes as very sustainable levels. There is less demand for Plaice across the continent which means that it's really important that we celebrate this fabulous fish from our own shores. Plaice are easily recognised by their distinctive orange spots, however in the sea these clever fish will camouflage themselves, changing colour to match their surroundings. They will often live until 30 years of age or more, with the oldest Plaice ever landed being a whopping 50 years old! Approximately 140g.

Dover Sole is prized for its taste and texture, it is simply one of the most show-stopping, luxurious species from our shores. We love to cook Dove Sole under the grill with a good pinch of pure sea salt and a simple caper butter. Certainly with this fish, the more simple, the better. What makes Dover Sole so sought after is its incredible taste and texture, it is without a doubt the most flavoursome of all the Sole family. It is delicate and sweet with a firm texture and small flakes. These days Dover Sole stocks are incredibly well managed thanks to a successful Sole Recovery Plan as well as the 'Trevose Bank Closure' (active closure of areas of the North Cornish coast that protects spawning sole from winter to spring). The species is in abundance on our shores and is rated 2 by the MCS and Cornwall Good Seafood Guide. Dove Sole is some of the best seafood from our shores and is a real treat that we should celebrate. Dover Sole is commonly found throughout the coastal waters of Devon, Cornwall and Dorset. They inhabit sandy and muddy areas, burying down into the seabed, lying in wait during the day and actively feeding at night. Dover Sole have been known to live for up to 40 years, but today are rarely caught above 15 years of age. They are a migratory species and leave the shoreline in the winter, returning in the spring. This highly prized game fish has a delicious, slightly oily white flesh - giving you the best of both worlds. We like to describe the taste of wild sea bass as a cross between cod and mackerel. The flavour and texture of sea bass means it can hold its own if cooked really simply and is also robust enough to take on flavour - including spice. Sea Bass has a classy reputation, for many years it has been featured on the menu of the best restaurants and is beloved by home cooks. However, this demand has driven the intensification of sea bass and often what you'll find on the fishmonger's slab or served up in a restaurant is farmed sea bass - an ecological nightmare. We only source Wild Sea Bass, caught using rod and line by a brilliant husband and wife fishing duo in Dorset. Sea Bass is a beautiful looking fish with silvery, iridescent scales. However don't be taken in by its beauty, it is a keen hunter and a hugely successful predator. The streamlined shape of the bass, its razor sharp spines and excellent eyesight give it an advantage over its prey. Bass will hunt in large shoals, but will also, when fish reach maturity, split off and hunt in solitary. Bass are highly mobile and migratory which means they can be hunting in our waters in large numbers, or rarely seen at all, making them a challenging or an abundant catch depending on the weather, time of year and location of food source. In recent years Bass stocks have recovered from the damaging European fishing of 2016. We now find plentiful Sea Bass in South West waters, however, to keep stocks thriving the catch method is important, which is why we only work with traditional rod and line. Our British caught Gurnard Fillet has a delightful neutral and understated aroma. Its firm, muscular texture is similar to that of the monkfish. Once considered as a bait for crab and lobster fishing, the humble Gurnard has come a long way in culinary terms. The firm texture takes to strong flavours well making it perfect for use in curries and stews. However, Gurnard should not be overlooked as a star in its own right. We love to simply pan-fry, making sure the skin is super crispy. Gurnard are large headed, prehistoric looking fish, heavily armoured with spines around the body for protection. Despite being one of the ugliest fish in the sea, Monkfish is beloved by chefs and home cooks. The firm, meaty white flesh with its lobster-like flavour is highly versatile, perfect for putting on the barbecue or roasting in the oven. Its simple bone structure makes it really easy to prepare, with a quick drag of a knife the bone is removed in a flash. Our Monkfish tails come beautifully prepared by the talented team at Rockfish. The skin is removed along with the membrane making it ready to cook straight away. Monkfish are predatory fish whose strategy is to lie in wait on the seabed, ready to leap into action. The Monkfish's wide toothy mouth can engulf its prey easily in one gulp. This dormant nature has made them an easy bycatch for large-scale trawlers in other areas of Europe where Monkfish are now under threat. However, Devon and Cornwall’s fishing fleet is small scale in comparison to other parts of Europe. The Southwest fishing community has cooperated fully with fisheries scientists in improving the selectivity of gear and even carried out a major research project on Monkfish. The use of acoustic pingers in all gill net fisheries outside the 6 mile limit has also reduced bycatch and improved stocks. Monkfish stocks are now in healthy sustainable numbers thanks to over a decade of work by South West fishers. They can be caught using a variety of methods including Demersal Trawl, Beam Trawl and Gill Netting, which are all rated 2-3/5 by the Cornwall Good Seafood Guide. A durable 18/10 stainless steel stockpot with extra capacity for larger quantities. This stockpot is easy to clean and looks great. It is efficient too - the fully encapsulated, impact bonded induction base ensures fast, even heating. A stockpot is a deeper pot with a larger capacity but doesn’t take up more space on the hob. Use the stockpot on the hob or in the oven, perfect for making stocks, soups, casseroles and curries. It can also be used for cooking vegetables, potatoes, rice or pasta. The comfortable stainless steel loop handles are riveted to the stockpot and will stay cool when used on the hob (provided flames are not licking up the sides). The glass lid has a convenient steam hole so that you can see what is happening inside the stockpot without losing heat by lifting the lid. What is 18/10 stainless steel? When investing in stainless steel cookware you want 18/10 stainless steel as it is more durable and will retain its good looks. 18/10 stainless steel includes 18% chromium and 10% nickel.
