When Marco Pierre White arrived at Le Manoir, he brought immense talent, wild hair, and a fiercely competitive streak. Raymond Blanc recently opened up about what it was really like managing the fiery young chef. At the time, Blanc was expanding the restaurant and navigating a divorce, making White's disruptive desire to be the pack leader a significant challenge.

Despite the friction, Blanc recognised unrivalled potential. While White was already a master technician crafting visually stunning dishes, Blanc felt the food initially lacked depth. He took it upon himself to teach White the true art of taste, showing him how to build complex layers of sweet, bitter, acid, and sour notes. Within a year, White had completely mastered this philosophy, setting him on the path to three Michelin stars.

The tension in the kitchen eventually boiled over onto the football pitch. With a kitchen split evenly between British and French chefs, Blanc organised a match between service times to build camaraderie. It backfired spectacularly. The agile French team quickly went two nil up, frustrating the British squad. In a moment of madness, White delivered a colossal full body blow to a smaller French chef, drawing blood.

Acting as referee, Blanc showed White a red card and fired him on the spot after a foul mouthed exchange. Sitting on the touchline, White brilliantly argued his case. He pointed out that they were on a break, he had insulted the referee rather than the chef, and firing him could lead to a tribunal. Amused and outmanoeuvred, Blanc reinstated him immediately. He waited until the following week to fire him properly in the kitchen.

Watching the interview below captures the brilliant humour and affection Blanc still holds for his former protégé.
